Ingredients

For the Chocolate Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

For the Truffle Filling:

  • 8 oz (225 g) semi-sweet chocolate, chopped
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • 2-4 tablespoons heavy cream (as needed)

Instructions

Step 1: Baking the Cake

  1. Preheat the Oven: Set the oven’s temperature to 350°F (175°C). Butter & dust two 9-inch circular cake pans.
  2. Mix Dry Ingredients: Sift flour, sugar, baking soda, cocoa powder, baking powder, and salt in a large basin. Toss to blend well.
  3. Add Wet Ingredients: Combine the dry ingredients with the eggs, milk, oil, and vanilla. For about two minutes, mix on medium speed until thoroughly incorporated. Stir in the hot water little by little until the batter is smooth; it’s acceptable for the batter to be thin.
  4. Bake the Cakes: Evenly distribute the batter among the cake pans that have been preheated. When a toothpick put into the center comes out clean, bake for 30 to 35 minutes. Allow the pans to cool them for 10 minutes before transferring to wire racks to cool completely.

Step 2: Preparing the Truffle Filling

  1. Heat the Cream: Place the heavy cream in a small saucepan and heat it over medium heat until it starts to simmer. Take off the heat.
  2. Melt the Chocolate: Transfer the chopped chocolate to a basin that can withstand heat. After pouring the heated cream over the chocolate, wait two to three minutes. Mix the mixture until it becomes shiny and smooth. Add the butter and stir until it melts and blends thoroughly.
  3. Cool the Filling: Allow the truffle mixture to cool to room temperature, then refrigerate for about 30 minutes until it thickens slightly but is still spreadable.

Step 3: Making the Frosting

  1. Cream the Butter: In a large mixing bowl, beat the softened butter until creamy and light.
  2. Add Sugar and Cocoa: Gradually add the powdered sugar and cocoa powder, mixing on low speed to avoid a sugar cloud. Once combined, add the vanilla and enough heavy cream to reach your desired frosting consistency. Beat on high for 2-3 minutes till fluffy.

Step 4: Assembling the Cake

  1. Layer the Cake: Once the chocolate cakes are completely cool, place one layer on a serving plate. Spread a generous layer of the truffle filling over the top.
  2. Add the Second Layer: Place the second cake layer on top of the truffle filling.
  3. Frost the Cake: Use the chocolate frosting to cover the top and sides of the cake. For a smooth finish, you can use a spatula or a bench scraper.
  4. Decorate: For an extra touch, consider adding chocolate shavings or fresh berries on top.
